Almond milk waffles with Strawberry Nice cream

March 6, 2020

Another cheat day meal to the repertoire….but if you can’t have a cheat day meal on Mothers day, when can you have a cheat meal ??

I have to admit I had never made waffles before. As I was recipe researching I was concerned that I’d have to separate my eggs and fold the whites into the batter. Instead I thought I’d take a risk and throw everything into the Vitamix and they turned out so soft and fluffy. No folding required. I was really impressed with the result and the berry nice cream was a great accompaniment! Also how cute are the love heart waffles πŸ™‚

I’m desperate to try these again as they were so easy. Loved using my new Vitamix Ascent, it such a great machine and looks so fancy in my kitchen as well!!

If you’ve been following me for a while you will know that Vitamix has been such an important appliance for my health journey. I’m not joking I use this machine at least once a day. Everything from smoothies, nut milks, dips and spreads, brownies, waffles, pesto (SO MANY options). Their new Ascent range is the only true high-performance blender with wireless connectivity and a system of SELF-DETECT™ containers and accessories, delivering the ultimate convenience and versatility, both at home and on the go.

Not only does the Vitamix Ascent make my life a whole lot easier in the kitchen it also looks the part on my counter top! It definitely has that ‘designer’ kitchen look and is something I am proud to have on show! It is the perfect gift for Mothers Day and this recipe will put a smile to any busy mum trying to implement healthier choices πŸ™‚

Hope you enjoy this recipe! Happy blending πŸ™‚

WAFFLES

2 cups wholemeal flour

2 tsp. baking powder

1/2 tsp salt

4 large eggs

1 tbsp. stevia

2 cups almond milk

2 tbsp. melted coconut oil

NICE CREAM

3 frozen bananas

1 cup frozen blueberries

1 cup fresh strawberries

1/2 cup almond milk

2 tsp. Acai powder (optional)

Coconut spray (for coating the waffle iron)

Fresh berries

Cacao nibs

Maple Syrup

Method:

  • Preheat the waffle iron….I bought this one from Williams Sonoma.
  • For the waffles: place everything into a high speed blender and blend until combined. I use the Vitamix Ascent.
  • For the nice cream: place everything into a high speed blender and blend. Leave to one side.
  • Fill the waffle iron with a portion of the batter. Cook until crisp and golden. Place waffle to one side until all the batter has been used!
  • Top with the nice cream, fresh berries, cacao nibs and maple syrup.
  • Enjoy! x x
