I have been making thai salads recently and I had a small box of kaffir lime leaves leftover. As I went to make my green smoothie I noticed all the tropical fruits I was using and I thought the kaffir lime would be an interesting addition. Lets just say this smoothie was an absolute WIN 🙂
The fresh lime zest brought a really nice zing to the smoothie too, so refreshing for summer! I didn’t add protein powder, but feel free to add some if you like!
You will need:
1/2 cup of chopped pineapple
150ml organic almond milk
handful of spinach
the zest of 1/4 lime
1/2 cup of coconut yoghurt
2-3 kaffir lime leaves de-veined and sliced finely
2-3 big blocks of ice
- Combine all of the ingredients into a high speed blender, I use my beloved vitamix. Blend until smooth.
- Check the consistency, add more nut milk if too thick or more ice if too thin.
- Enjoy x x
