C’mon its all time that we embraced ourselves and worshipped the bodies we were given! This bowl, is a firm favourite of mine and something I could eat for a late breakfast, lunch or dinner quite happily. I call it the ‘love yo’self’ bowl because of all the immune boosting herbs and spices rich in anti-oxidants and the superfoods kale, quinoa, avocado and chickpeas offering fibre, protein, healthy fats, essential vitamins and minerals and further anti-oxidants (to name but a few!)
It helps that ‘eating your greens’ isn’t such a chore anymore with this plate of healthy goodness!
You will need:
1 brown onion
1 clove garlic
sprinkling of chilli flakes
2 cups of roughly chopped kale
10 asparagus spears, heads and ¾ stalk chopped
sprinkling of turmeric
sprinkling of cinnamon
1 ½ cups of cooked quinoa
100g of cooked or tinned chickpeas
4 eggs** (Vegans can use hummus see note)
sprinkling of sesame seeds
1 nori square
seasoning
1 tbsp olive or coconut oil
1-2 tpsp tamari
Method:
- Cook the quinoa (1 cup of quinoa for 3 cups of water, until absorbed)
- Boil eggs in a pan until they are how you like them, peel them and leave to one side (I like mine medium boiled)
- Fry off the onion, garlic and chilli in a pan or wok with the olive/coconut oil
- Add in the kale and asparagus
- Add 1 tbsp of tamari and the turmeric and cinnamon, stir-fry for a minute
- Add the cooked quinoa and chickpeas and the remaining tamari
- Transfer to dishes and top with the eggs, sesame seeds and slice the nori sheet on top
- Season to taste
NB: For the vegans out there this is also really tasty with my home-made hummus dolloped on top instead of the eggs…mmmm!
