Cacao Orange Sweet Potato Protein brownies
Finally I made my own version of Sweet Potato brownies and just in time for Mothers Day :) I have been wondering what all the fuss has been about and now I know! I wouldn't say these are 'healthy' brownies but using sweet potato does make for a great 'healthier' substitute. The consistency is out of this world - so gooey and delicious! I made two batches, one was for extra thick and gooey brownies and the other batch I made for thinner brownies (almost slices). Both had a great consistency but I have to say the thicker ones would be my number one choice :)If you've been following me for a while you will know that Vitamix has been such an important appliance for my health journey. I'm not joking I use this machine at least once a day. Everything from smoothies, nut milks, dips and spreads, brownies, waffles, pesto (SO MANY options). You will need
1/2 Cup of Almond Milk
1 tsp vanilla powder
juice of half an orange
zest of a whole orange
4 tbsp. wholemeal flour
2 tbsp. cacao powder
2 scoops of Welleco NOURISHING PLANT PROTEIN Peruvian Chocolate
2 tsp baking powder
1 tbsp. nut butter...I use Mayvers Super spread
2 tsp natvia stevia
2-3 cups of peeled, cooked sweet potato
1/2 cup of almond meal
2 tbsp. maple syrup
cacao nibs
40g Chocolate, broken, roughly chopped (I use vegan chocolate pana chocolate)
Method:
Preheat the oven to 180 degrees C
Steam the sweet potato until very soft and falling apart. Leave to one side to cool.
Place all of the ingredients including the sweet potato (NOT the broken chocolate) into a high speed blender. I have recently upgraded my Vitamix to the new Ascent series - SO good!!
Once blended and mixed thoroughly, fold the chocolate pieces through the brownie mix
Grease and line a baking tin (I use coconut oil). I used a brownie tin. I made two batches, one batch (in a smaller tin) where the brownies were really thick and gooey and one batch in a larger tin where the brownies turned out more like slices.
Top the brownie mix with cacao nibs and place in the oven for 20-30 mins.
Voila! You have perfect sweet potato brownies!

Notes:
I finely sliced an orange and placed the pieces on a low heat in the oven for about an hour and placed them on top of the brownies :)
You could also grate orange on top
