Matcha Coconut Chia Pudding with cinnamon
Chia Pudding is something you HAVE to add to your repertoire, it is so easy to make! If you follow me on snapchat: ‘sophieluxe’ you will see all of my behind the scenes recipes that I rustle up for you guys and chia pudding always makes a feature.
Quince, blackberry and apple crumble
There is something terribly nostalgic about fruit crumble for me. Growing up in Wales my mum would regularly make crumble with the fruit we would harvest from the garden.
Almond milk waffles with Strawberry Nice cream
Another cheat day meal to the repertoire….but if you can’t have a cheat day meal on Mothers day, when can you have a cheat meal ?? I have to admit I had never made waffles before.
Cacao Orange Sweet Potato Protein brownies
Finally I made my own version of Sweet Potato brownies and just in time for Mothers Day :) I have been wondering what all the fuss has been about and now I know!
Sugar Free Fruit Crumble
I know I’ve said it before but fruit crumble is terribly nostalgic for me. Growing up in Wales my mum would regularly make crumble with the fruit we would harvest from the garden. Usually rhubarb, wild blackberries and apples.
Mango and coconut chia pudding
Chia Pudding is something you HAVE to add to your repertoire, it is so easy to make! It’s just chia seeds, nut milk and then leave it overnight….I mean, seriously?! You can get creative with what you add into your milk (like I did here) or you can keep it plain and add delicious toppings (or you can do both of course!).
The perfect cheat day treat: sweet nectar
Look…I’m not one to shy away from a cheat day treat BUT since becoming a bit more health conscious over the last few years even for my cheat meal I like to keep away from refined sugar and processed food. I recently tried Sweet Nectar desserts and I was SO impressed!
Cacao and Peppermint bliss balls
I haven’t done a recipe for bliss balls in such a long time and they are things I make pretty much every week for meal prep 🙂 Cacao and mint are one of my favourite combinations so I thought I would share this ever so easy and simple recipe with you!
Spiced fruit crumble with vegan ice cream
Honestly this reminds me of my mums fruit crumble SO much which is such an awesome food memory for me! This is so easy to make and I can guarantee you friends, family or loved ones will be asking for seconds. I try to limit my dairy so I use coconut milk ice cream and I find it compliments the dish really well.
Carob banana smoothie
Yes I’m back on the smoothie bandwagon 🙂 I’ve just finished my third week of the Matthew Kenney Raw Vegan chef course and cooking healthy, delicious food every day has ignited my food inspiration once again!
Lemon and turmeric low sugar balls
As you may have seen from my other energy ball recipes they often contain natural sugar derived from dried fruit such as dates, apricots, sultanas and so on. I thought I would come up with a low-sugar recipe for all of you who are trying to watch your sugar intake and possibly lose weight.
The tastiest Coconut and Strawberry Chia Pudding: Slinkii
You all know how much I love my chia puddings! SO easy to make, low fat, nutritious and delicious! Check out this yummy recipe I did for the Slinkii blog here
Vegan ice-cream cake you can eat for breakfast
I’m not a big fan of authorising sweet-treats for breakfast just because it contains ‘natural’ sugar. I do honestly believe in a well-balanced diet so if you want pancakes for breakfast covered in lashings of maple syrup then that is great! But I wouldn’t recommend it as a morning ritual.
Matcha Carob & Pistachio Pops
True to form I thought another matcha recipe was mandatory! I love the flavour of these protein balls, you can really taste the green tea coming through and the carob and pistachio compliment this perfectly.
Cinnamon protein balls with a secret ingredient
Well what is the secret ingredient?? It’s Turmeric of course! I’ve said it before but Turmeric is such a wonder spice, I leave it on my kitchen bench and throw it into my cooking whenever I can!
Rainbow smoothie bowl you need to try now
This is a different take on my acai smoothie bowl and one of my favourite smoothie bowls to make! The Acai berry is grown in the Amazonian rainforests in South America and grows on a palm tree as opposed to a bush.
Foodmatters Feature: Salted Caramel nice cream

Apple do-nots
Snack time is always the most dangerous time for me. Give me a bag of potato chips I’ll eat the whole lot, chocolate biscuits? Umm….yes please! So I’ve tried to find ways to always have snack food on hand that is not going to pile on the pounds and is still tasty and satisfying!
Vegan chocolate bark
YUMMMM! Similar to my v’day chocolates this is so easy and looks so impressive if you pull it out at a dinner party. It literally takes 10 minutes to make! Because of the fresh fruit it can only keep for a couple of days…
