Pantry saver bowl

EASY CHEAT MEAL XX. I usually have an avocado on my windowsill, a tin of organic tuna in the cupboard, free range eggs in my fridge and some quinoa and brown rice in my pantry.

This was one of those days where I had looked around my kitchen, decided there was nothing to eat, had a cup of tea and then thought I’d make a tiny bit of effort to see what I could rustle up.

I have to say ‘bowl food’ is definitely the type of food I gravitate towards and once completed this satisfied every inch of my hungry tummy.

Serves 1

You will need:

½ an avocado

80g cooked brown rice

100g cooked quinoa

1 x egg

1 tbsp of home-made hummus

1 x small tin tuna

sprinkle of chilli flakes

dash of tamari

salt and pepper

Method:

  • Place the rice and quinoa in a bowl and mix together. Add the tuna, avocado and hummus.

  • Fry the egg in a pan with coconut or olive oil and place on top of the bowl

  • Sprinkle with tamari and chilli flakes and season to taste.

  • Enjoy x x
