I don’t know about you but I always have SO MUCH leftover Kale in the fridge! It just never seems to all get eaten….until I put this kale pesto together! This is so amazing with zoodles, crudités, on toast, on eggs, on anything you would usually put pesto on really 🙂
I put quite a lot of lemon in my kale pesto…if it is too much leave the juice of one lemon out and/or the rind.
I’m not vegan but this pesto has no cheese so I thought it would be a good recipe for all of my vegan followers. Honestly I don’t think it needs cheese and is just as delicious without….I hope you all agree!
You will need:
2-3 cups of kale (I usually remove the stalks)
1 x cup of fresh basil
juice of 2 lemons
1/2 cup of raw cashews
1/2 cup of olive oil
rind of 1 lemon
salt and pepper
- Place all of the ingredients into a high speed blender.
- Blend and season to taste
- Enjoy x x
