the ultimate asian breakfast bowl

Sometimes I wake up and crave something savoury, so this is my current go-to breakfast salad. I like it because it’s low carb and low sugar but still really satisfying! Lots of protein and nutrients from the kale and mixed mushrooms, good fats from the avocado and a healthy portion of protein from the eggs πŸ™‚

If you’re not too keen on eating tamari, sesame seeds and chilli in the morning just leave them out and top with lemon and fresh herbs for a light, zingy alternative!

Also this ‘breakfast bowl’ can be eaten at any time of day so feel free to have a nice healthy lunch or dinner!

You will need:

4 x kale leaves, chopped roughly

1/2 cup of mixed asian mushrooms

1/2 red onion, roughly chopped

2 x eggs, boiled

1/2 an avocado

1 tsp chilli flakes

dash of tamari

sesame seed and nori mix

olive/coconut oil

Β serves 1

Method:

  • Place your eggs into a medium pot and boil/simmer until they are cooked the way you like them (I like mine medium boiled). Peel and leave to one side.
  • Add a dash of oil to a large pan or wok. Add in the kale, mixed mushrooms and onion. Fry for a few minutes before adding the chilli and tamari.
  • Slice your avocado into big chunks.
  • Arrange your kale mix onto your plate with the boiled eggs and avocado. Sprinkle with your sesame seeds and nori flakes.
  • Season to taste.
  • Enjoy x x
