Make your vegetables taste AMAZING with these easy dressings and marinades

I have a confession…….I’m a condiment addict!! Sauces, dressings, oils, butters – yes please!

Vitamix is the PERFECT tool to whip up sauces and marinades to make all of your meal prep and veggies taste amazing! Also – how good is it to open your fridge and cupboards to see a well stocked pantry of all these yummy things ?! Can’t beat it – and when it’s home-made you can be sure you are staying away from nasty preservatives, sugars and added ingredients you don’t need or want 🙂 – happy days!

Here are some awesome marinades produced by Vitamix to add awesome flavour to salads, vegetables and crudités. If you are a seafood or meat eater they can also work on them too! I thought this post was perfect for fathers day as I don’t know about yours but my dad loves a good sauce and marinade 🙂

Spicy Honey Vinaigrette

A sweet and spicy, Thai-inspired dressing, delicious on salads with pea pods, radishes, and shredded carrots, or as a marinade with grilled meats and vegetables.

Ingredients

  • 60 ml (¼ cup) apple cider vinegar
  • 1/4  cup honey
  • 2 teaspoons Sriracha sauce
  • 2 teaspoons soy sauce
  • 1 garlic clove, peeled
  • 1 teaspoon fresh ginger root
  • ¼ teaspoon ground black pepper
  • 160 ml (⅔ cup) olive oil

Directions

  1. Place vinegar, honey, Sriracha, soy sauce, garlic, ginger root and black pepper into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 7.
  4. Blend for 5 seconds. Remove the lid plug.
  5. Slowly pour oil through the lid plug opening in a slow, steady stream. Replace the lid plug.
  6. Slowly increase speed to Variable 10, then to High.
  7. Blend for 15 seconds or until emulsified.

Lemon Garlic Dressing

A spicy lemon garlic dressing for tossing with fresh greens or marinating chicken.

Ingredients

  • 3 lemons, peeled and halved
  • 1½ teaspoon hot sauce
  • 6 garlic cloves, peeled
  • 1½ teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 Tablespoon salt
  • 240 ml (1 cup) olive oil

Directions

  1. Place lemon, hot sauce, garlic, paprika, and seasonings into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 45 seconds to 1 minute, using the tamper to press the ingredients into the blades.
  5. Reduce speed to Variable 7 and remove lid plug. While machine is running, slowly pour in oil through lid opening.
  6. Blend for 20 seconds.

Notes

If doubling, use 2 lemons, increase hot sauce to 1 teaspoon, paprika to 1 teaspoon, cumin to 1/2 teaspoon, and increase olive oil to 240ml (1 cup).

Ginger Citrus Salad Dressing

A savoury blend of ginger, coriander, and spring onion combined with peanut oil and citrus fruits to create a classic Asian salad dressing or marinade.

Ingredients

  • 60 ml (¼ cup) white wine vinegar
  • 1 orange, peeled, halved
  • 1 lemon, peeled, halved
  • 1 lime, peeled, halved
  • 1 spring onion, diced
  • 1 teaspoon Dijon mustard
  • 1 Tablespoon fresh ginger root
  • 1 teaspoon salt
  • 60 ml (¼ cup) olive oil
  • 120 ml (½ cup) peanut oil
  • 2 teaspoons sesame oil
  • 1 Tablespoon honey
  • 15 g (¼ cup) fresh parsley leaves, chopped
  • 1 teaspoon fresh coriander leaves, chopped

Directions

  1. Place vinegar, orange, lemon, lime, onion, mustard, fresh ginger, and salt into the Vitamix container in the order listed and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 10, then to High.
  4. Blend for 30 seconds.
  5. Remove the lid plug and slowly add oils in a thin stream through the lid plug opening until emulsified.
  6. Reduce speed to Variable 4 and add parsley and coriander.
  7. Blend for 1 minute until smooth.

Notes

Multi-purpose sauce that can be used as a salad dressing or marinade.

Thai Curry Carrot Sauce

The sweetness of carrots and a touch of brown sugar balance the spiciness of red thai curry paste in this blended seasoning. Ideal for seafood or sprinkled over rice and roasted vegetables.

Ingredients

  • 2 carrots, halved
  • 1 garlic clove, peeled
  • 1 Tablespoon lemongrass, sliced
  • 300 ml (1¼ cup) chicken stock
  • 120 ml (½ cup) milk
  • 120 ml (½ cup) coconut milk
  • 1 Tablespoon fish sauce
  • 1 teaspoon red curry paste
  • 1½ teaspoon light brown sugar
  • 1½ teaspoon cornstarch
  • 2 Tablespoons fresh coriander leaves, chopped

Directions

  1. Place carrots and garlic into the Vitamix container and secure lid.
  2. Select Variable 1.
  3. Turn machine on and slowly increase speed to Variable 5 or 6.
  4. Blend for 10 seconds until chopped. If necessary, use the tamper to press any ingredients into the blades while processing.
  5. Put carrot mixture, lemongrass, chicken stock, milk, coconut milk, fish sauce, curry paste, and brown sugar into a saucepan and simmer for 15 minutes or until carrots are soft.
  6. Let cool for 10 minutes or until temperature reaches 160°F (70°C).
  7. Place this mixture and the cornstarch into the Vitamix container and secure lid.
  8. Select Variable 1.
  9. Turn machine on and slowly increase speed to Variable 10, then to High.
  10. Blend for 4 minutes or until heavy steam escapes from the vented lid.
  11. Reduce to Variable 5 and add cilantro through lid plug opening. Blend for 20 seconds.

Notes

For lower sodium, use low-sodium chicken stock. Recommended for seafood, rice, and grilled or roasted vegetables.
