Almond milk waffles with Strawberry Nice cream

Another cheat day meal to the repertoire....but if you can't have a cheat day meal on Mothers day, when can you have a cheat meal ??I have to admit I had never made waffles before. As I was recipe researching I was concerned that I'd have to separate my eggs and fold the whites into the batter. Instead I thought I'd take a risk and throw everything into the Vitamix and they turned out so soft and fluffy. No folding required. I was really impressed with the result and the berry nice cream was a great accompaniment! Also how cute are the love heart waffles :)I'm desperate to try these again as they were so easy. You will need:

WAFFLES

2 cups wholemeal flour

2 tsp. baking powder

1/2 tsp salt

4 large eggs

1 tbsp. stevia

2 cups almond milk

2 tbsp. melted coconut oil

NICE CREAM

3 frozen bananas

1 cup frozen blueberries

1 cup fresh strawberries

1/2 cup almond milk

2 tsp. Acai powder (optional)

Coconut spray (for coating the waffle iron)

Fresh berries

Cacao nibs

Maple Syrup

Method:

  • Preheat the waffle iron....I bought this one from Williams Sonoma.

  • For the waffles: place everything into a high speed blender and blend until combined. I use the Vitamix Ascent.

  • For the nice cream: place everything into a high speed blender and blend. Leave to one side.

  • Fill the waffle iron with a portion of the batter. Cook until crisp and golden. Place waffle to one side until all the batter has been used!

  • Top with the nice cream, fresh berries, cacao nibs and maple syrup.

  • Enjoy! x x
