Glow bites

TURMERIC ENERGY BARS xx.

Just like my protein balls you can keep these in the freezer which is so handy! I love the fruity, orange taste they have with the crispiness of the buckinis and the turmeric taste!

Turmeric has proven health benefits and is well known for being an amazing anti-inflammatory and antioxidant and is said to improve brain function and reduce heart disease! I always keep my jar of Turmeric out as a gentle reminder to sprinkle here and there when I can :)

You will need:

1/2 cup mixed nuts (i used almonds, cashews, hazelnuts)

1/2 cup of coconut flakes

1/2 cup of dried fruit (i used apricots and raisins)

5 x medjool dates, pitted

1/2 cup of oats

juice of 1/2 orange

1/2 tsp cinnamon

1 tsp turmeric

1/4 tsp vanilla powder

1/4 cup of raisins

Topping:

1/2 cup of desiccated coconut

1/2 cup of activated buckwheat

1/2 tsp turmeric

1/2 tsp cinnamon

Makes (approx) 8 - 10

Method:

  • combine all of the ingredients (apart from the topping) into a blender or food processor. Blend using a tamper, I like to keep my mixture quite rough with chunks of nuts and fruit here and there!

  • Cover a baking tray with cling film

  • Place the mixture on top of the cling film and flatten (i made my mix 2 cm thick)

  • Mix the topping ingredients into a mixing bowl.

  • Place on top of your mix and flatten with a spoon

  • Place into a freezer for at least half an hour

  • Take out and slice into the desired sizes

  • I keep mine in the freezer.
