Matcha Coconut Chia Pudding with cinnamon

Chia Pudding is something you HAVE to add to your repertoire, it is so easy to make! If you follow me on snapchat: 'sophieluxe' you will see all of my behind the scenes recipes that I rustle up for you guys and chia pudding always makes a feature. Purely because it's just chia seeds, nut milk and then leave it overnight....I mean, seriously?! You can get creative with what you add into your milk (like I did here) or you can keep it plain and add delicious toppings (or you can do both of course!)

Matcha, coconut, cinnamon and sweetened nut milk is a really nice combination but if you don't have the same amount of love for Matcha that I do just simply leave it out and you will still have a delicious chia pudding! It's really good with fresh fruit such as mango and fresh berries!

You will need:

2 cups of almond milk

1/2 tsp vanilla powder

1-2 tbsp maple syrup

1 tbsp matcha

2 tbsp of chia seeds

Topping

Coconut Flakes

Sprinkling of Cinnamon

Method:

  • Add your almond milk, vanilla powder, maple syrup and matcha to a high speed blender and blend. I use my favourite: Vitamix

  • Add your chia seeds to a bowl and top with the milk.

  • Stir and leave for at least an hour. I like to leave it overnight but after an hour you can try it for taste and see if you need to add more maple syrup/matcha and so on.

  • Top with your coconut flakes and cinnamon

  • Enjoy x x
