Salmon salad with a chilli and chive dressing

With summer just around the corner I really like to get on the salad bandwagon. It sounds pretty obvious but it’s so easy to get stuck in a rut with the same old nicoise. 

This is a really simple salmon salad, which is light and fresh. Its great served as an entrée or lunch dish! If you are vegetarian/vegan you could substitute the salmon for silken tofu cut into cubes.

You will need:

2 x fillets of hot smoked salmon (150 – 200g)

Lettuce leaves

1 x cup of Cherry tomatoes

½ Red onion

1 x Julienne carrot

Sliced lemon to serve

Dressing:

40ml Olive Oil

Half a freshly squeezed lemon

1 tsp. Chili flakes

1 tbsp. Chives

Serves 2 (or 4 as an entrée)
