My weekend breakfast - coconut fruit bowl

So easy and delicious.....and almost too pretty to eat!

I think every other morning of the week I'm in such a rush so this bowl of yummy usually takes place over the weekend. No its not just fruit and yoghurt I would like to think it takes a whipped, delicious twist!

You will need:

Coconut yoghurt:

100ml of yoghurt - I use vegan coconut yoghurt

1/4 cup slivered/chopped almonds

1/4 cup chopped pistachios

1-2 tbsp maple syrup

1/4 tsp vanilla powder

Fruit:

selection of different fruit

I used:

blueberries

strawberries

kiwi fruit

banana

dragonfruit

I topped off with chia seeds and the remaining nuts

Method:

  • Blend everything for the coconut yoghurt in a high speed blender reserving some of the nuts for topping

  • Arrange in a bowl with the selection of fruit

  • Enjoy x x
