Tofu fritters with kimchi and pickles : Kelloggs Nutrition

GUT HEALTH - we've all heard about it, but how can we improve it? Also why is it important?

Well....when I think of gut health I think of Fibre as this is what feeds the good bacteria living in your gut (promoting the growth of bifidobacteria and lactobacillus, which supports a positive change in the intestinal microbiota, as part of a healthy and varied diet). Without fibre they can starve. When the good bacteria are well fed, they grow & thrive. More good bacteria promotes better digestive balance, which supports your gut health - easy right ?!

Kelloggs Nutrition recently contacted me asking for me to try one of their 'gut friendly' recipes using a Kellogg's fibre rich cereal. I happily obliged and chose to make the tofu fritters with kimchi and pickles (seriously so much yum!!)

Keeping our gut healthy is so important for health and wellbeing and Kelloggs have made it easy to do that with this delicious but easy recipe to get that good bacteria flowing....and growing :)

I used All Bran cereal as it contains natural wheat bran fibre!!

Serves: 1-2Preparation Time: 15 mins Cooking Time: 10 mins

You will need:

 ½ (150g) container extra firm tofu

1 egg beaten

2 Tbsp Kellogg’s All Bran® Wheat Flakes

3 spring onions (finely sliced)

2 tbsp wholemeal flour

1 tsp grated garlic

1 tbsp soy sauce

Pinch pepper

2 tbsp kimchi

1 large dill pickle, sliced

2 tbsp plain Greek yoghurt with a squeeze of lemon and pinch of grated garlic

Rocket to garnish

Olive oil for frying

Method:

  • Make sure your tofu is extra firm, well drained and dry

  • In a large bowl mash tofu into small crumbs and add cereal, flour, spring onions, egg, garlic, soy sauce and a pinch of pepper then mix well to combine

  • Gently form the tofu mixture into two equal patties

  • Heat oil in a frypan and gently fry fritters on both sides until golden

  • Plate fritters and top with kimchi, sliced pickles and Greek yoghurt

  • Garnish with fresh rocket

Notes:

  • If you prefer, replace Kimchi with sauerkraut

  • If you are vegan you can leave the egg out and blitz the mixture in a food processor to make more of a batter. Also you can replace the greek yoghurt with an unsweetened dairy free alternative!
